Can you guess our favorite part of this cake 😀 We simply had to try it because I loooove heritage recipes that have come down through generations…I figure there is a reason you know? This came from Mary over at Hope Echoes–she made a special point to get us all the recipe after putting the cake name in her “Where I’m From”. I only had to accuse her of being a cake-tease the once too! I was going to do a big long picture-full post about it but meh–I think a few will do donchoo??

Dry ingredients…
Mixing in the wet…mmmmmm
We did leave out the red coloring…NOT a big fan of colored-for-the-sake-of-making-it-red red things here–If we eat it and it’s red–GOD made it red! 😛 Kinda hard to call it Red Earth Cake I suppose but I remain unmoved and it’s MY kitchen after all.
Then I put nuts on top of it and big marshmallows cut into quarters anad my fingers were all marshmallow sticky and it was Sunday morning and I wanted it ready in time to take to potluck so no pics of the big yummy mallows and nuts–I did snap a couple AFTER a poured on the hot drippy icing that ga-LUES them to the top of the cake.
FUDGEY!!
The verdict? I think my Baking Soda may be a bit flat-it didn’t rise as much as I would have liked-a bit dry and dense but I will try again for sure–the frosting was glorious and easy too–or as Mary likes to say (in my comments no less) “Easy Peasy Lemon Squeezy” The coffee in this chocolate cake makes it very nice indeed!

I can’t believe nobody left a comment. I am glad you liked the rocky road icing. I still don’t think I will be making the Red Earth Cake anytime soon.

That cake looks absolutely divine. Mr. Nomad is off to Scouts with The General tonight, and you can bet Princess & I are going to be doing a little baking.

Ya know, normally a post like this would have me drooling on my keyboard. Absolutely.
But…the reason it’s hard for me to get excited about this glorious looking delight (I mean, rocky road icing? That’s worth getting VERY excited about!) is the same reason I haven’t posted the report on the delectable goose dinner.
We are all afflicted.
After our guests left on Saturday, I went to bed and stayed there until today (Tuesday evening at present). We spent today, our best day yet, lying around listening to the Scarlet Pimpernel on Librivox (I’m working on a way to call that school – French Revolution history?), but pausing it every time we couldn’t hear it over the coughing. 🙄
Right about the time I find food appealing again, I’ll be back here to give this post the appreciative study it deserves. 😛

Of COURSE you can call Scarlet Pimpernel school–it’s a CLASSIC! Throw in some literary comments here and there and you can call it English too —and if you make sure everybody is unhappy and miserable (easy when sick)-it’ll be a cakewalk! 😆 (we all know that school only counts if the students hate it right?)

I know. You can’t imagine how it’s hurting me not to glory in my success. I have some great pics of my dessert (which I am inordinately proud of) that I’ve been so wanting to share, but … you know how when you have been sick after eating something, though it is no fault of the something you ate, and is completely unrelated – you still feel extra aversion to the thought of the last food you ate before you fell ill?
This is my great tragedy. 😦
I’m hoping it will pass when I am restored to appetite again, because I really, really want to share my dinner pics – just want to do it when I can enjoy it!

I made the cake on Friday for our Catholic Homeschool Group. It was a huge hit, YUMMY!
